  • This caramelized pork dish with eggs is something most Vietnamese families will eat during Lunar New Year.  You will also find that almost most of Asia has a dish similar to this that is eaten all throughout the year.  Though I have grown up loving my grandmother's and mom's version of this dish, I decided to chef it up a bit while keeping the flavors traditional.

     

    Instead of the hard boiled eggs or canned quail eggs you may see in recipes, my version will have soft boiled eggs.  While the traditional version has a clear broth like sauce, mine will have caramelized onions that creates a jammy like texture that gets lightened with coconut water.  This balance of sweet and savory is perfect for the rich eggs and pork.  That is why I am pairing this with my grandmom's easy pickled cabbage recipe and rice to complete this meal.
