STRAWBERRY RHUBARB JAM AND FRESH RICOTTA TOAST | Saturday 5/8 at 12 pm EST
Few seasons get me as excited as the beginning of the summer when Louisiana strawberries are at their peak. You can tell when the berries are perfectly ripe when you slice them in half and they’re just as deep red on the inside as they are on the outside. Perfection. One of my favorite ways to keep enjoying the surplus of the season is to reserve some to make into a jam which is especially great with rhubarb. I love eating my sweet, tangy fruit with something light and creamy (think strawberry shortcake, fruit tarts, etc) which is why I love pairing my jam with a light, fresh ricotta on toast or other fresh breads and pastries for a springtime snack.
