NINI'S PASTRY SCHOOL | 5-week course starting Saturday 03/13 at 12 pm EST
I'm so excited to have an outlet to teach some of my favorite desserts and break them down into foundational elements that I think every dessert enthusiast should know.
This 5-week course will be a live, virtual class and recorded for you to reference in the future. Each class will last approximately 3 hours and will include light "homework" assignments to enforce skills and techniques on your own time and to prepare certain elements ahead of time for the next class.
Upon purchasing, you'll receive a class syllabus for each week which will include lessons on making custards and pastry cream, a variety of tart doughs and how to use them, assembling an entremet, and culiminating in baking and decorating a tiered cake of your very own.
The syllabus document will also include a list of necessary and optional equipment to have on hand. The specific recipes and recommended pantry items will be sent at least one week before the first class so you'll have plenty of time to prepare!
Held on Saturdays at 12:00 pm EST, the schedule is as follows:
- Week 1: March 13th
Custards and doughs
- Week 2: March 20th
Tarts, fillings, and cakes
- Week 3: March 27th
Creme anglaise, ice cream, mousse and meringue
- Week 4: April 3rd
Making a composed dessert, entremet, and more fillings
- Week 5: April 10th
Mini wedding cake, butter creams and cake decorating
